Title: Sky-High Rice Salad
Categories: Diabetic Salad Rice Vegetable
Yield: 6 Servings

3cRice, regular; cooked, cold
1cCorn, whole kernel; cooked, cold
1cCelery; thinly sliced
1/4cPepper, green; chopped
1/4cOlived, stuffed; sliced
3tbOnion; minced
1/4cPickle, dill; chopped
3/4tsSalt
  Pepper, black; to taste
1/4tsCurry powder
2tbChutney
1/3cDressing, French
  Crisp salad greens
2 Eggs; hard-cooked, sliced

Combine first 9 ingredients. Stir curry powder and chutney into French dressing; pour over salad. Toss lightly, and chill until serving time. Mound on crisp salad greens. Garnish with slices of hard-cooked eggs.
